This chocolate cake is made from cocoa powder, red sorghum, cassava flour, brown sugar, apple sauce and has a rich coffee flavour to accentuate the cocoa flavour. The cake is topped with vegan chocolate ganache and seasonal fruit. The chocolate’s rich, sweet taste pairs well with fruits that have a tang, such as the berries we use. The darkness of the chocolate helps neutralise the natural sweetness of the fruits.
